4 Sausages

1 clove of garlic

1 bunch of sage

2 tbsp of tomato concentrate

200 gr of beans

2 Carrots

3 Celery

1/2 Onion

2/3 Tomatoes

Start by putting the beans to soak in cold water for 24 hours. After this time start with boiling the beans, put them in a pot with water, onion, three stalks of celery and two carrots and cook for 40 to 45 minutes. Once cooked drain them and leave them aside. Take now the sausages and make a few little hole with a fork on them to bring out all the excess fat and prevent the burst firing, in a hot frying pan cook well for 10 minutes by covering them with a lid. Once they’re cooked change the pan and pour a thread of a clove of garlic and sage bunch. Fry the garlic, pour the beans and season with salt and pepper, add the tomato paste and a glass of water, passed three minutes add extra virgin olive oil, the sausages and if necessary still water, cover and simmer for 15 minutes. Once all the water will be evaporated the sausages and beans are ready to serve, perhaps accompanied by a slice of Tuscan bread.
